Raw Avocado-Cilantro Mexican Soup With Cumin, Apple Cider Vinegar and CASHEWS

Mexican food typically isn’t the healthiest of choices. Their dishes are often loaded with cheese and packed with fatty ingredients, like sour cream. However, by focusing more on the healthy foods that are involved in Mexican cooking, such as avocado and cumin, as well as by substituting some of their regular ingredients with nutritious ones, you can enjoy a Mexican meal that is both good for your taste buds and your health.
This Mexican-inspired recipe contains ingredients that will keep your body happy.

*Cumin

Cumin is an herb that shows up often in Mexican food. It’s regularly used in taco seasonings. While packaged seasonings aren’t something your doctor would prescribe, cumin is an ingredient that comes with several health benefits.
Cumin contains essential oils, magnesium and sodium, which makes this food good for digestion and relieving stomach aches. In addition, its antifungal and antimicrobial properties help with constipation and with healing infections or wounds in the digestive and excretory systems. In turn, this helps battle insomnia as having a healthy digestion promotes a good nights’ sleep.

*Cashews

You’ll also be happy to know that cashews are cholesterol-free and can be used in recipes or eaten on their own.

*Apple Cider Vinegar

Incorporating apple cider vinegar to your diet has also proven to be beneficial. This sour liquid aids in weight loss and helps control blood sugar levels.
The only stipulation with consuming apple cider vinegar is that you should always dilute it in water before drinking some. Due its high acidic content, having it straight can harm you.

Raw Mexican Avocado Soup

Think guacamole, only creamier and greener and packed with nutrients!

Ingredients:

Avocado Soup

  • 1 organic avocados
  • 3/4 of a medium organic cucumber
  • 1 organic celery stalk
  • juice of 1 lime
  • Small handful of fresh cilantro
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp sea salt
  • 1 tsp of tamari or dark soya sauce
  • 1 cup of filtered water

Raw Vegan Sour Cream

  • 1.5 cup unsalted cashews
  • 2 tbsp of lemon juice
  • 1 tbsp of Apple Cider Vinegar
  • 1 cup of filtered water
  • 1/2 tsp of sea salt

Instructions:

Avocado Soup

  1. Peel the avocado and remove the stone.
  2. Wash the other ingredients.
  3. Blend everything until nice and smooth
  4. Transfer to a serving bowl and garnish with sour cream, pinch of paprika, poppy seeds and some chipped chives and mushrooms.

Raw Vegan Sour Cream

  1. Soak the Cashew Nuts for 2-4 Hours.
  2. Drain the water away and wash the nuts before using.
  3. Blend all ingredients in a high-speed blender until smooth.
  4. Use to garnish the soup.
Note* Any leftovers will keep in the fridge for 2- days and make a great dip!
