Vegan Cookie Recipe: Healthy Rolled Oats Oatmeal Nut Cookies

While we normally go deliciously rich and decadent desserts—as witnessed here and here—there are times when we want a snack that’s good for us and not filled to bursting with sugars and carbs. Today, we decided to come up with a vegan cookie that has no added sugar and yet still has tasty flavor that gives us a little boost whenever we taste it.

The base of these cookies is oats and cashews (though you can choose any nut butter you like), and it’s packed with seeds and peanuts and dried fruit, and everything comes together to form this perfectly crunchy and chewy bite-sized treat. If you want to make it a little sweeter, you can always add some honey or dates into the mix, but we’ve gotta say, we like them just how they are!



Rolled Oats and Nut Cookies

Yield: 1-2 dozen
Ingredients
  • 3 large, very ripe bananas
  • 2 1/2 cups rolled oats
  • 3/4 cup raw cashews
  • 3/4 cup raisins or dried cranberries
  • 1/4 cup peanuts, roughly chopped
  • 1/4 cup sesame seeds
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
Directions
  1. Preheat oven to 350ยบ F, position oven rack in the middle of oven and line a baking sheet with parchment paper or a silicone baking mat.
  2. Combine ripe bananas, cashews, cinnamon, baking soda and salt in the bowl of a food processor and pulse until mixture is smooth and there are little to no lumps remaining.
  3. In a bowl, combine oats with dried fruit, sesame seeds and chopped peanuts, and pour wet banana mixture into the dry ingredients.
  4. Mix together so everything is fully incorporated and combined, then, using a spoon or your hands, begin forming your cookies and transfer them to your baking sheet.
    Note: you can place them close together since the cookies won’t rise.
  5. Bake for 25 minutes, or until edges just begin to brown, but centers are still a little squishy.
  6. Remove from oven, let cool 10 minutes and serve warm (or warmed up in the microwave).

Eating Sesame Seeds Superior To Tylenol for Knee Arthritis

A remarkable new study published in the International Journal of Rheumatic Diseases confirms that food is not only medicine, but sometimes superior to it Medical researchers working out of Tabriz University of Medical Sciences, Tabriz, Iran, sought to investigate the effects of sesame seed supplementation on clinical signs and symptoms in patients with knee  osteoarthritis.[i]



Knee osteoarthritis is a form of degenerative joint disease or degenerative arthritis localized in the knee, and causes a variety of symptoms including pain, swelling, abnormal bone growth (which can result in bone spurs), disfigured cartilage and loss of motion, and it affects as many as 12.1% of adults aged 60+, according to the CDC.[ii]  Standard therapy involves the use of NSAID drugs, many of which have been linked both to internal bleeding and significantly increased risk of cardiac mortality, which is why the researchers sought out to look for "a complementary treatment to reduce complications and costs."
The study took fifty patients with osteoarthritis of the knee, and divided them into two 25-patient groups: a sesame group, receiving 40 grams/day of powdered sesame seeds, and a standard drug therapy group, receiving two 500 mg doses of Tylenol twice a day along with 500 mg of glucosamine once daily. After two months of treatment, 22 patients in the sesame intervention group and 23 patients in the control group completed the study.

Considering that treatment was comprised of little over an ounce and one half of sesame seeds, the results were truly remarkable. As presented in Table 1 above, there was a significant difference in pain intensity between the two groups after treatment, with the sesame group seeing the largest drop from 9.5 before treatment to 3.5 after treatment, and the control group seeing a more modest drop from 9 before treatment to 7 after treatment. Additional measurements were taken using both the Knee Injury and Osteoarthritis Outcome Score (KOOS) Questionnaire and the Timed Up and Go (TUG) Test. Both tests revealed a similar degree of positive change in both treatment and control groups, when compared to baseline. [See table 2 and table 3 below].

Taken together, sesame was the clear winner. Not only was this food therapy superior in reducing the intensity of pain, but it was at least equal in effectiveness to Tylenol and glucosamine in both the KOOS and TUG tests. This, of course, was accomplished without the notorious side effects associated with Tylenol; to the contrary, sesame seed has a wide range of side benefits, which we covered recently in our article on sesame's health benefits.
So, how much is 40 grams of sesame seed? A tablespoon of sesame seeds is approximately 9 grams. So, approximately 4 tablespoons will get you to what the study found to be a 'clinical dose.' Also, the researchers powdered the sesame seeds in order to enhance digestion. Remember, it is best to do this fresh with a mortar and pestle (first choice) or coffee grinder, also making sure that your seeds are raw, certified organic, and vetted to have not undergone gamma irradiation.
To truly appreciate the significance of this study, take a look at the growing body of toxicological research indicating that the unintended, adverse health effects of Tylenol (acetaminophen) far outweigh its purported benefits. Open Sesame! 10 Amazing Health Benefits Of This Super-SeedSesame (Sesamum indicum) is one of the oldest cultivated plants in the world, prized as an oilseed for at least 5,000 years.  While it is beginning to regain favor due to its exceptionally high calcium and magnesium content, few realize it is also one of the most potent medicinal foods still commonly consumed today.

In fact, its history as a medicine goes back 3600 years to Egyptian times where it was listed in the scrolls of the Ebers as a favored medicine.  Also, women in ancient Babylon were believed to use a mixture of honey and sesame seeds (halva) to prolong youth and beauty, and Roman soldiers ate the mixture for strength and energy.

In the past twenty years, a glut of scientific information has poured in demonstrating that sesame seed, and its components, have over three dozen documented therapeutic properties [see sesame research page].  Given these new revelations, it would seem that sesame would be just as at home in a medicine cabinet as it would be a kitchen cupboard.

Here are just 10 evidence-based medicinal properties of this food-medicine:

Diabetes: A study published in 2011 in the Clinical Journal of Nutrition showed that sesame oil improved the effectiveness of the oral antidiabetic drug glibenclamide in type 2 diabetic patients. [1]  Another study published in 2006 in the Journal of Medicinal Foods showed that the substitution of sesame seed oil as the sole edible oil lowers blood pressure and glucose in hypertensive diabetics. [2]

High Blood Pressure:  A study published in 2006 in the Yale Journal of Biological Medicine showed that sesame seed oil has a beneficial effect in hypertensive patients on either diuretics or beta-blockers. Substitution of all dietary oils with sesame oil brought down systolic and dystolic  blood pressure to normal, in addition to decreasing lipid peroxidation (bodily rancidity) and antioxidant status. [3] One of the compounds identified behind sesame seed's antihypertensive effects are peptides that act as angiotensin I-converting enzyme inhibitors.[4]
Gingivitis/Dental Plaque: Sesame seed oil has been used for oral health for thousands of years in the traditional Indian medical tradition known as Ayurveda in a process known as "oil pulling." It involves swishing sesame seed oil in the mouth for prolonged durations and has been said to prevent teeth decay, halitosis, bleeding gums, dry throat, and for strengthening the teeth, gums and jaw. Clinical research now confirms that it compares favorably to chemical mouthwash (chlorhexidine) in improving plaque-induced gingivitis,[5] and that it is capable of reducing Streptococcus mutans growth associated with oral plaque formation. [6]

Infant Health/Massage Oil:  A study published in the Indian Journal of Medical Research in 2000 showed that massaging infants with sesame oil improved both their growth and post-massage sleep, in comparison to control oils such as mineral oil.[7]
Multiple Sclerosis (MS): In the animal model of MS, also known as experimental autoimmune encephalomyelitis, sesame seed oil protects mice from developing the disease by reducing IFN-gamma secretion, a key factor in initiating autoimmune inflammation and injury in the nervous system.[8] It has also been research for its potential beneficial role in another neurodegenerative condition, Huntington's disease. [9]

Antibiotic-Induced Kidney Damage: Sesame seed oil protects against gentamicin-induced kidney damage in rats by reducing oxidative damage caused by the antibiotic.[10]
Atherosclerosis: Sesame seed oil prevents the formation of atherosclerotic lesions in mice fed an atherogenic diet.[11]  The antioxidant and anti-inflammatory lignan found within sesame seeds known as sesamol has been identified to be partially responsible for its anti-atherogenic properties. In fact, sesamol has been shown to possess over two dozen beneficial pharmacologically active properties, many of which may contribute to improving cardiovascular health.

How much to use ?

I would not roast it unless it has to be used roasted and I did not read any comparative studies too. Heat can make the fat worse, especially omega 6, and makes enzymes useless(enzymes may not be much important in this food) but it may also eliminate antinutrients. Nuts and seeds are suggested to be soaked in water to get rid of antinutrients but it's not much practicable with sesame.

My question is, how much do you use and what is the amount you use based on ? Too much omega 6 may bring one closer to all inflammatory diseases:

Selection between healthy foods that are high in omega 6 contradicts me. I've let myself eat a diet with high(though lower than most people's diets) omega 6 to omega 3 ratio for some time and I want to lower this ratio in my diet. Getting back to sesame, I will make a selection between sesame and eggs because they are both vitamin T and also omega 6 sources. Sesame is a source of sesamol and sesamin, and eggs are one of the best sources of phosphatidyl choline. Lignans are better obtained from high omega 3 source flax seeds, I think and other choline sources are either unpleasant to eat to me(organ meats, fat trimmed kidneys are best choline sources per calories) or inconvenient to eat enough to get enough choline(vegetables, cauliflowers are best), therefore I will try to choose eggs usually.

So which high omega 6 source foods and how much do the writers here suggest in general ? I do not know and I hope to read on this.

Even niacin or folic acid alone has been show to have this effect in patients. Garlic – as we have documented extensively previously, garlic can save your life. It has been found to regress plaque buildup in the arteries, among many other potentially life-saving health benefits.

Remember, heart disease is not a natural process, that we must accept as inevitable based on family history of an outdated gene-based model of human disease risk.  new study published in the journal Atherosclerosis confirms that pomegranate extract may prevent and/or reverse the primary pathology associated with cardiac mortality: the progressive thickening of the coronary arteries caused by the accumulation of fatty materials known as atherosclerosis.[i]
Mice with a genetic susceptibility towards spontaneous coronary artery blockages were given pomegranate extract via their drinking water for two weeks, beginning at three weeks of age. Despite the fact that pomegranate treatment actually increased cholesterol levels associated with very low density lipoprotein-sized particles, the treatment both reduced the size of the atherosclerotic plaques in the aortic sinus (the dilated opening above the aortic valve) and reduced the proportion of coronary arteries with occlusive atherosclerotic plaques.
Remarkably, the researchers also found that pomegranate extract treatment resulted in the following beneficial effects:
  • Reduced levels of oxidative stress
  • Reduced monocytie chemotactic protein-1, a chemical messenger (chemokine) associated with inflammatory processes within the arteries.  
  • Reduced lipid accumulation in the heart muscle
  • Reduced macrophage infiltration in the heart muscle
  • Reduced levels of monocyte chemotactic protein-1 and fibrosis in the myocardium
  • Reduced cardiac enlargement
  • Reduced ECG abnormalities
How can something as benign and commonplace as a fruit extract reverse so many aspects of coronary artery disease, simultaneously, as evidenced by the study above?  The answer may lie in the fact that our ancestors co-evolved with certain foods (fruits in particular) for so long that a lack of adequate quantities of these foods may directly result in deteriorating organ function.  Indeed, two-time Nobel Prize winner Linus Pauling argued that vitamin C deficiency is a fundamental cause of cardiovascular disease, owing to the fact that our hominid primate ancestors once had year-round access to fruits, and as a result lost the ability to synthesize it.
Discussion
This study adds to the already extant body of clinical research indicating that pomegranate can help unclog your arteries.  For instance, back in 2004, the journal Clinical Nutrition published the results of a three year clinical trial in an Israeli population, finding that the daily consumption of pomegranate juice reversed carotid artery stenosis by up to 29% within 1 year.  Remarkably, the blockages in the control group increased 9%, indicating that pomegranate's artery unblocking effects were even greater than at first apparent. [ii]

Pomegranate's value in cardiovascular disease is quite broad, as evidenced by the following experimentally confirmed properties:

Anti-inflammatory: Like many chronic degenerative diseases, inflammation plays a significant role in cardiovascular disease pathogenesis.

Blood-Pressure Lowering: Pomegranate juice has natural angiotensin converting enzyme inhibiting properties, [iv] and is a nitric oxide enhancer, two well-known pathways for reducing blood pressure. Finally, pomegranate extract rich in punicalagin has been found reduce the adverse effects of perturbed stress on arterial segments exposed to disturbed flow.
Anti-Infective: Plaque buildup in the arteries often involves secondary viral and bacterial infection, including hepatitis C and Chlamydia pneumoniae.[vii] Pomegranate has a broad range of anti-bacterial and anti-viral properties.
Antioxidant: One of the ways in which blood lipids become heart disease-promoting (atherogenic) is through oxidation. LDL, for instance, may be technically 'elevated' but harmless as long as it does not readily oxidize. Pomegranate has been found to reduce the oxidative stress in the blood, as measured by serum paraoxonase levels.  One study in mice found this decrease in oxidative stress was associated with 44% reduction in the size of atherosclerotic lesions.
