The Simplest Way To Get Kids To Eat More Vegetables

You probably remember, as a kid, pushing anything green to the edges of your plate, hoping no one would notice. You had already eaten the delicious slab of protein that had been in the center of your plate. You weren't hungry anymore. You wanted to go play.
Well, what if you had just been a little hungrier?
That's the question researchers at Brigham Young University set out to answer. They found that kids just aren't hungry enough at lunchtime to eat their vegetables. The solution? Simple. Have recess before lunch, not after.
The researchers found that when recess takes place before kids sit down to eat, fruit and vegetable consumption increases significantly.
The study, published in Preventative Medicine, looked at 2,500 students in seven Utah elementary schools who participated in the National School Lunch Program, which serves lunches that must include a serving of vegetables. Three schools switched their schedules to hold recess before lunch, while the other four schools kept recess after lunch. Researchers stood by the garbage cans and measured how many kids threw away their fruits and vegetables.
They found that the simple schedule swap boosted produce consumption by 54% per kid. Yes, that much. Not only that — 45% more kids ended up eating a serving of fruits and vegetables, which reduced waste by 40%. And as for the schools that didn't switch, produce consumption actually decreased during the same time period.
"Recess is a pretty big deal for most kids. If you have kids choose between playing and eating their veggies, the time spent playing is going to win most of the time," said Joe Price, co-author of the study, in a press release.
When kids don't get a full, balanced meal, they can feel hungry later in the day, which leads to poorer academic performance and excessive snacking when they get home, the authors write. And this behavior can have adverse health effects in the long term.
The researchers' proposed schedule switch is a win-win situation for elementary schools and their students. It won't cost them anything — in fact, they'll save money by reducing waste — and the kids will be healthier.
It seems like a no-brainer. A minor, rather inconsequential change to the schedule that could drastically change children's lives. Hopefully news will travel quickly and school districts will take action. We'll just have to wait and see.

Overfed But Undernourished? 9 Signs You're Nutrient Deficient

As a nutritionist, I know one thing's for sure: the road to chronic disease often begins on our plate! While many people turn to pills for relief, the downside of this strategy is that meds often address symptoms rather than treat the root cause(s) of disease.
Here are nine signs that your lack of health and happiness might actually be a nutrient deficiency:
1. You're suffering from anxiety and depression.
According to the National Institutes of Health, about 21 million American adults suffer from a mood disorder every year. A deficiency in the following nutrients may be linked to anxiety and depression: B vitamins, biotin, vitamin C, vitamin D, calcium, chromium, selenium, omega-3 fatty acids, and iron.
2. Your bones are weak.
No matter how old you are, strong bones are vital to feeling fit and healthy. If you have troubles in this department, you might be lacking: vitamins A, vitamin C, vitamin D and vitamin K, copper, chromium, zinc, magnesium, and molybdenum.
3. You have brittle hair & nails, or hair loss.
It doesn't matter if you're male or female, beautiful hair and nails are really nice to have. If you're not too happy with yours, you could be needing vitamins B5, B6, B12, biotin, or chlorine.
4. You're tired all the time.
Do you sometimes feel like you want to do so much but are just too tired to do anything? Fatigue is a huge problem for many of us and keeps us from living life to the fullest. If you're lacking energy, you might be missing: vitamins B1, B3, B11, B12, vitamin C, vitamin D, biotin, iron, potassium, or magnesium.
5. You're experiencing hyperactivity/ADHD.
Sometimes meds are necessary to help you calm your mind. But maybe you're lacking attention and calm "simply"because you are deficient in: vitamins B1, B2, B5, E, omega-3 fatty acids, iron, magnesium, or zinc.
6. You have poor immunity, or you experience infections often.
Nobody wants to be sick all-the time or constantly deal with inflammation or infections. A strong immune system can fend off a lot and help you heal. If your body's defense is constantly letting you down, however, it may be calling for vitamins A, C, D & E, chromium, selenium, magnesium, or zinc.
7. You have skin troubles.
Acne, rashes, eczema and age spots can be very annoying and undermine our self-esteem. There's a lot we can put onto our skin, but if you want to heal your issues from within, it's good to know that skin troubles are often caused by a deficiency in: vitamins A, B3, biotin, B8, C, E, omega-3 fats, copper, selenium, or zinc.
8. You're dealing with digestive issues.
If you don't digest and absorb your food properly, the best diet in the world is pretty useless. If you're suffering from poor digestion, constipation, diarrhea, bloating or other GI tract troubles, you might be lacking: vitamin B11 & iron, B8,B12, C, D, E, K, selenium, magnesium, or zinc.
9. You can't sleep.
Did you know that 90% of people who suffer from sleeplessness also suffer from other chronic conditions such as diabetes, stroke, heart disease or high blood pressure? They are also more likely to feel depressed or gain weight.
If getting enough zzz's seems impossible, you could be deficient in: Vitamins B11, E, calcium, magnesium, or zinc.
What to do if you're worried that you're nutrient-deficient
Keep a diary and note down when exactly you experience which symptoms. Once you've got a good overview, call your doctor to schedule a comprehensive blood test and, if possible, discuss the results with someone experienced in orthomolecular therapy.
Also, make sure to eat a balanced diet, rich in a rainbow of colors. Aim to eat at least five servings of fruits and vegetables a day. Some ideas to help you do this:
  • Have "liquid salads" (aka green smoothies).
  • Put a bowl with fruit on every table in your home.
  • Keep containers with a mix of veggies in your fridge to take with you when you leave the house.
  • Dehydrate veggies.
  • Make your own veggie chips.
  • Schedule actual fruit breaks in your agenda (with reminders).
If our body and mind are out of balance, there is a lot we can do ourselves to make things better. Start slowly with simple and real food, find alternatives for coffee, alcohol, and white sugar (because these affect the absorption of nutrients) and learn about a holistic approach to health and happiness.

Did your grandparents have food allergies? Mine sure didn’t. A stark comparison to the growing epidemic of food allergies, worsening with every generation.
So why didn’t your grandparents have food allergies? It’s really quite simple…

1) THEY ATE SEASONAL REAL FOOD.

Food came from farms and small markets in the early 1900’s, and because food preservatives were not widely used yet, food was fresh. Because of the lack of processed food, their diets were nutrient dense allowing them to get the nutrition they needed from their food.
For babies, breast milk was valued and it was always in season.

2) THEY DIDN’T DIET, AND PLAY RESTRICTIVE GAMES WITH THEIR BODY AND METABOLISM. THEY ATE FOOD WHEN FOOD WAS AVAILABLE.

Our grandparents did not fall victim to fad diets, food marketing, calorie counting, and other detrimental dieting habits that are popular today (in part because the marketing infrastructure didn’t exist yet). Because of this they had a healthy metabolism, and ate according to their body’s needs and cravings.

3) THEY COOKED FOOD AT HOME, USING TRADITIONAL PREPARATION METHODS FROM SCRATCH.

Buying processed food was not an option, and eating out was a rare luxury. Lucky for our grandparents these habits actually increased their health.

4) THEY DIDN’T EAT GMOS, FOOD ADDITIVES, STABILIZERS AND THICKENERS.

Food was not yet treated with additives, antibiotics and hormones to help preserve shelf life and pad the pockets of food producers in the early 1900’s at the expense of the consumer’s health.

5) THEY ATE THE WHOLE ANIMAL THAT INCLUDED MINERAL RICH BONE BROTHS AND ORGAN MEATS.

Animal bones were saved or bought to make broths and soups, and organ meats always had a special place at the dinner table. These foods were valued for their medicinal properties, and never went to waste.

6) THEY DIDN’T GO TO THE DOCTOR WHEN THEY FELT SICK OR TAKE PRESCRIPTION MEDICATIONS. DOCTOR VISITS WERE SAVED FOR ACCIDENTAL INJURIES AND LIFE THREATENING ILLNESS.

When they got a fever, they waited it out. When they felt sick, they ate soups, broths and got lots of rest. They did not have their doctor or nurse on speed dial, and trusted the body’s natural healing process a whole lot more than we do today. Their food was medicine, whether they realized it or not.

7) THEY SPENT LOTS OF TIME OUTSIDE.

Our grandparents didn’t have the choice to stay inside and play on their phones, computers and gaming systems. They played on the original play-station:  bikes, swing-sets and good ol’ mother nature!

AND WHAT DO THESE THINGS HAVE TO DO WITH FOOD ALLERGIES?

Nutrition affects EVERY cell in our body. The health of our cells is dependent on diet and lifestyle. Cells create tissues, tissues create organs,  and we are made up of a system of organs. If your nutrition is inadequate, the integrity of each cell, tissue and organ in your body will suffer, thus you may be MORE sensitive to certain foods.

Want To Detox? Eat This Superfood

In a world where toxins seem to be everywhere, a food that sucks those bad chemicals right out of your body seems like a science fiction dream-come-true. Well, broccoli sprouts, and other cruciferous vegetables like kale, may just be the amazing detox food we’ve all been waiting for!
According to NPR, a new study published online in the journal Cancer Prevention Research suggests that consuming broccoli sprouts helps people get rid of common pollutants benzene and acrolein (which you’re exposed to when at a gas station, around smokers or in a heavily polluted area).
For the study, 300 Chinese adults drank a beverage made with broccoli sprouts every day for three months. Drinking the beverage, the researchers found, led to high rates of the pollutants in participants’ urine, leading scientists to believe that the broccoli sprouts sped up excretion of those terrible toxins. In fact, it was found that drinking broccoli sprouts upped excretion of benzene by a whopping 63%.
NPR is reporting that scientists speculate that a compound found in cruciferous vegetables (hello, kale!) may be playing a big role in getting rid of the toxins. Apparently, this compound causes enzymes to increase their activity, so they remove a greater amount of toxins from the body.
For now, load up on those broccoli sprouts if you’ve been hanging around the gas station! And stay tuned for more research on how cruciferous veggies can help you detox!

21 Ways To Stay Healthy When You Sit At A Desk All Day

For those of us who sit down at a desk most of the day, health and well-being aren't always easy to work into our lifestyles. Still, the facts show that we must be proactive about eating well and moving enough during the day in order to avoid weight gain, stress and flagging fitness.
Sitting down all day long is one of the worst things for your health, as it increases the likelihood of heart disease and weight gain — among other ills. We sit down at the office, then we sit in the car, and once home, we sit to eat and watch TV!
What to do? Small changes, practiced consistently over a long period of time, are the best way to increase health and well-being. Here are 21 easy-to-adopt ideas to get inspired. Remember, you don’t have to do them all!!
1. Take hourly breaks.
Every hour, get up from your desk and go for a quick walk anywhere (furthest restroom, copy machine, water cooler, colleague’s desk). Just move.
2. Stretch or move in place.
Don’t have anywhere to go? Touch your toes, walk or march in place for a few minutes, do a good set of jumping jacks (who cares what your neighbor thinks!).
3. Take a meeting on the move.
Have a meeting or brainstorm scheduled? Do it while you walk — not only good for fitness, but helps manage stress and fires up creativity!
4. Treat elevators, escalators and moving walkways as the enemy.
Unless you work at the top of a 40-story building, consider elevators your enemy. Ditto for escalators and walkways.
5. Forget phone and email.
Not always practical, but try visiting your colleagues in person every once in a while.
6. Walk at lunch.
Have an hour for lunch? Use half to eat, half to walk. Round up a few colleagues and make it a weekly date.
7. Count it out.
Get a pedometer and try to clock 10,000 steps per day.
8. Ditch the car.
When possible, walk, bike, run to work. If you live too far away, try parking far away from your destination and walking part of the way. Or get off the train/metro/bus several stops early.
9. Do something active before you get home.
Stop at the gym/pool/track on the way home from work.
10. Wake up earlier.
The easiest way to work more fitness into the day is with a DVD (yoga, cardio, strength training). Get moving before the rest of the world wakes up!
11. Schedule your weekly fitness on Sunday night.
Studies show that scheduling what you eat and when and how you exercise is the best way to stick to a healthy lifestyle. Write it down!
12. Set alarms on your computer or mobile device.
Every hour at work, have a little ringer go off to remind you to take a stretch or walk to the nearest copy machine.
13. Organize your office.
Use your time filing to stand up and move around your office. Don’t roll your chair around your office to get to your filing cabinets.
14. Walk when you talk.
Since most people talk on their mobile phones, make it a practice to get up from your seat and go for a walk when you're on the phone.
15. Get friendly with your Tupperware.
If you cook a healthy meal at home, save part of it, and take it to work the next day for lunch. Add a few chopped veggies and you have a great homemade meal!
16. Go nuts!
Instead of buying candy bars or “health” bars (which are loaded with sugar) from the vending machine, keep handy a stash of dry fruit or nuts.
17. Load up on herbal teas. 
Forget the coffee breaks with your friends and colleagues. Grab your favorite mug and start sampling herbal teas: try red fruits, verbena, mint for example.
18. Hit the water. 
Get yourself a reusable water bottle and keep it on your desk. Make yourself drink at least one full bottle before lunch, and one full one before you go home at the end of the day. Drinking water will keep you fuller and less tempted to snack on empty calories.
19. Just say no!
Say, “No thanks,” to all the treats that get passed around the office: cakes, doughnuts, bagels, cookies. If you’re truly hungry, reach for the dried fruit and nuts.
20. Schedule your meals.
When scheduling your fitness on Sunday night (see above!), work out your meal plans in and out of the office, and include snacks.
21. Skip restaurants whenever possible.
Restaurant food is loaded with extra sugar and salt, and so is unlikely to be as healthy as something you can make at home. Better to have a simple lunch from home or leftovers from the night before.
If you do eat out, choose fresh, healthy salads or other foods when possible. If you eat well at lunch, you won’t want to graze on junk food in the afternoon.

The world is slowly waking up to the fact that, when you give the body what it needs, it can heal things we previously thought were impossible. A fine example of what is often deemed as an incurable health problem is dental cavities, but extensive research is now becoming more public about the true nature of tooth decay and the fact that there are proven remedies that can remedy it.

The lies perpetrated about tooth decay. According to the American Dental Association, the reason we have tooth decay is as follows: “[Tooth decay] occurs when foods containing carbohydrates (sugars and starches) such as milk, pop, raisins, cakes or candy are frequently left on the teeth. Bacteria that live in the mouth thrive on these foods, producing acids as a result. Over a period of time, these acids destroy tooth enamel, resulting in tooth decay.” There are a few problems with this theory, including: Groups of indigenous people who had fermentable carbohydrates stuck on their teeth all the timethat did not brush or floss were mostly or completely free of tooth decay. Bacteria do not consume processed sugar or flour because of the lack of nutrients in them. Foods that bacteria like to eat, such as milk, vegetables, meat, fish and fruit, are not commonly implicated in causes of tooth decay. So if the modern explanation of tooth decay is not accurate, what is actually the cause of tooth decay? What actually causes tooth decay Tooth decay, as researched by Dr. Weston Price and other dental pioneers, boiled down to three factors: Not enough minerals in the diet. Not enough fat-soluble vitamins (A, D, E, and K) in the diet. Nutrients not being readily bioavailable, and your intestinal system not properly absorbing them. 

 The presence of phytic acid largely influences this factor. Over a period of time, if your diet lacks vitamins and minerals from a poor diet and/or contains high levels of phytates (from grains, seeds, nuts, and legumes), the blood chemistry and the ratio of calcium and phosphorous become out of balance, which results in minerals being pulled from bones, causing tooth and bone loss. So, the long-standing belief that sugar causes tooth decay is true, but as a result of it depleting nutrients from the body, not because bacteria eat it and produce acid that ruins your teeth.  
 The food remedies that can heal cavities and tooth decay In order to restore the ratio of calcium and phosphorus in our blood, and to enable minerals to bond to our teeth, it is not enough to just avoid eating too many sweet or processed foods. We must also eat health-building foods, containing copious amounts of minerals and vitamins that will build a glassy hard tooth structure. Foods to focus on are: Coconut oil, grass-fed organic dairy (especially butter), grass-fed meats, seafood and bone broths. Organic cooked vegetables (soups with bone broth are ideal). Organ and gland meats, like liver. Limit foods that are high in phytic acid, like grains, beans, nuts and seeds, as well as limiting processed food intake full of processed flours and sugars that upset blood sugar balance. Supplements to consider are: Fermented cod liver oil – very high in fat soluble vitamins A, D and K. Magnesium – required to use calcium and phosphorous effectively. Gelatin – if you don’t have time to make bone broth, this is a good alternative and is great for gums and digestion. Now go get your pearly white smile back.

The Eight Nutrition Trends That Drive This Dietitian Crazy

As you can imagine, I hear and speak about nutrition day in and day out. It's a great job and I love it, but some trends just drive me nuts, and here they are:

People are getting too free -- as is, gluten-free, dairy-free, sugar-free, you name it.
There are always those people who have legitimate food intolerances and allergies who actually need a diet that is 'free' of something. Everyone else, it's not the wheat that's making you bloated, it's all those crackers you used to eat that aren't allowed on your gluten free diet. Cut the junk, lose the weight. It's pretty simple.

The concentration on one particular "superfood." 
Kale, I'm talking about you. I'm a dietitian and even I'm sick of kale. Listen, no one food is going to save your life or make you healthier -- it's what you eat overall that really counts. I'm glad that people are willing to branch out and try new foods such as kale, freekeh, goji berries and the like, but let's be clear: you don't need kale in your cookies.

Cleanses.
Your body doesn't function like a sewer pipe -- you can't just flush it out, and it doesn't contain pounds of crap that is going to make you sick. The role of your kidneys and your liver is to filter toxins out, and if those things are working fine (and they must be if you're feeling well), you're good.

Juicing.
Let me explain this one. Green juices can be very healthy -- it's always good to chew your greens and I prefer that you do, but green juices do contain a lot of good stuff. It's the juices or smoothies that have eight servings of fruit and tons of sugar that I take issue with. Two to three servings of fruit a day is sufficient for most people. Juice is not fruit, it's sugar water. Eat the whole fruit.

Going overboard, because more must be better.
Whether it's eating spoonfuls of coconut oil because you heard it's healthy (yes, some people do that), or taking handfuls of supplements, some people don't know when to stop. Unfortunately for them, sometimes more isn't better. Moderation is a hard concept, I suppose, but when has it ever been a good idea to eat oil by the spoonful?

Unhealthy for the sake of unhealthy.
Hopefully we're on the back end of this trend now, but restaurants serving dishes like duck fat fries with lardons and gravy topped with a pound of cheese, or putting pork belly in everything, it's not cool, it's unhealthy, and I still can't figure out why people boast about eating that stuff. Please stop.

Healthwashing.
Organic cookies are still cookies. Period.

Vilifying one food in particular.
The world's health woes are not just because of sugar, just like they were not just because of fat when we thought fat was terrible. People are sick mostly because they eat a lot of junk with all sorts of processed chemicals in it, and far less whole foods than they should. We have always known that sugar isn't something we need a lot of. Eat less out of a box, and you don't have to worry.

And one trend I love, the "new age" of nutrition.
People are more interested in nutrition than ever before, and are concerned in a different way about what they're putting in their body. Nutrition isn't only about trendy diets or losing weight anymore -- the culture of nutrition is changing to involve new foods going mainstream (quinoa, for example), a push for families to 
cook together, and far more awareness about where food is actually coming from.

This is one trend that I hope continues!
