This homemade banana and blueberry pancakes will be nicer than any you can buy

With these blueberry superfood pancakes (Yep, superfood. In Pancakes. We know; it's genius.) you will have all the taste and yet none of the sugar-rush that a pancake breakfast normally comes with.
Make these the night before or invite the gang for a laid-back brunch.
Either way, they are bound to go down a total treat.
Blueberry Superfood Pancakes
The recipe makes 10 pancakes
Ingredients
  • For the syrup:
  • 2 espresso (40ml)
  • 2 tbsp runny honey
  • 4 tbsp maple syrup
  • 1 tsp ginger
  • For the garnish:
  • 100 ml coconut yoghurt
  • 25 g pecans
  • 25 g goji berries
  • For the pancakes:
  • 300 g spelt flour
  • 1 egg
  • 150 ml oat milk
  • 1 ripe banana (mashed)
  • 1 tbsp golden caster sugar
  • 2 tsp baking powder
  • 200 g blueberries
Instructions
Place the drip ingredients for the syrup in a pan and reduce by half. Set aside.
Place the goji berries in a pestle & mortar to grind the berries into dust. Set aside.
Whisk the pancake ingredients together, leaving aside the blueberries.
Use a nonstick pan on medium heat and add a little oil to the pan. Place an egg ring into the pan, scatter in four to five blueberries and pour in three tbsp of the pancake mix.
Cook for one to two minutes then when they are ready to turn, sprinkle two or three more blueberries on top and flip. This way you’ll see juicy berries sticking out of your pancakes and it significantly improves the presentation. Cook for another minute.
Once you have your pancakes done, stack five per plate, drizzle with the coffee syrup, drop a dollop of coconut yoghurt on the top and sprinkle the goji dust and pecans on top. Boom!
